Story
The story of “Gravlax” begins with a different name, in a different place, where the now owners, Helen and McKenzie, met whilst running a brunch restaurant 250 miles north of Haywards Heath. Originally from West Yorkshire, the pair ran the Leeds Branch of the popular Brighton Coffee Company, Wolfox and their working relationship quickly evolved into a strong partnership both professionally and personally, built on a shared passion for hospitality, creativity, and creating welcoming spaces.
When it came time for a new challenge, the pair decided to pack up and move to the sunny south where they were offered the opportunity to run the Haywards Heath Wolfox venue as a franchise. Despite it being away from everything and everyone they knew, in a small residential area instead of a big city, they saw it as a chance for growth and for the next two years, the two dedicated their time to developing a venue that felt authentic and community focused.
Now, as of 2025, what was once “Wolfox Broadway” has been bought by the pair and rebranded as GRAVLAX. Keeping their core values at heart, Gravlax is an amalgamation of their love for Wolfox, their admiration of Scandinavian culture, and their passion for great food.
